The yuzu is a rough fruit, with specially high resistance to icy temperatures and widely used for seasoning dishes and dressing recipes. It has similar features with other citrus fruits as the lemon or the lime, but more peculiar and particular uses.

This ancient citrus of oriental origin has several uses in the food industry. On the one hand, the pieces of bark give an aromatic touch into infusions; on the other hand, we have the yuzu peels, widely used to prepare Aguas frescas.
